Easy Peasy

I recently purchased The Preschooler's Busy Book and The Toddler's Busy Book. I love, love, love the ideas. It's been a real help during these long days of summer with a very needy newborn and two older kids who are desperate for something to do. One of my favorites right now are these "Quickie Cookies". If you've got a few minutes, you can bounce a baby on your hip while your kids throw these together. They are good enough to use for service projects, bake sales, company, etc. Make ice cream sandwiches in a flash, too.

Quickie Cookies

1 package cake mix (I used milk chocolate, but devil's food, German chocolate and lemon would be awesome, too)
1/2 cup (1 stick) butter (I melted mine)
1 egg

Mix all the ingredients in a medium bowl. Mold into balls and place on greased (I use parchment instead) cookie sheet. Bake at 350 for 10 minutes or until done (it was 10 minutes 'cause I like them chewy). Cool for a few minutes on the sheet and then move to cool on wire rack.

I make these a lot too. Lolo likes to make the chocolate ones and then sprinkle snow (pwd. sugar) on them. I'm going to go look those books up right now.

These are the best! I've taste-tested them in several places. I don't have the self control to make them at home...I'd eat them all! :)

We have made these too! One yummy thing you can try too is putting an andes mint in the middle just as they come out of the oven and then after a minute sort of spread it around the top a little. The heat from the cookie melts the chocolate quickly. You can also use peanut butter cups. They are soooo good!
